This course will show you how to generate smoke. A lot of smoke. In fact, by the time you go home you'll smell like a smokey thing from smokeville. But, you'll learn how to choose and prepare and light your smoking fuel and discover the difference in smoking woods, chips and dust. You'll get to cook a whole smoked roast chicken between you, and to enjoy it for lunch. You'll also get to use smoking mazes and how to cure fish before a light cold smoke.
The course starts at around 9.30am over a cuppa and a quick tour of the facilities and a safety briefing. Then we'll get straight into the techniques used for both hot and cold smoking. Since cold smoking is more of a slower burn (sorry, we love puns), we'll get the Pro-Q fired up (there we go again) and we'll smoke some cheeses and butter (N.B if it's a hot day, we'll substitute butter for something else like garlic). Then, we'll knock up a beautiful hot smoked chicken which we'll share for lunch before spending the afternoon using a Dutch Oven and other equipment to make smoked breads and a cauliflower cheese.
