Delab ‘Ole – Pil Pil Style Sauce

When we created our first trilogy of sauces from Chillies grown on-site here at Bumblebee Cottage, we wanted the 3 sauces to do 3 things. Firstly, they HAD to be super tasty and so we worked very closely with the professional chefs who manufactured these for us to obtain the exact flavour that we wanted.

Secondly, we wanted to reflect the area that Bumblebee Cottage is situated and in which we, as owners, are incredibly proud; Delabole (hence Delab ‘Ole).

And finally, we wanted to create a sauce that was influenced by somewhere that we, as owners had either lived or traveled extensively, and of course, we have spent a number of years living in Southern Spain.

This sauce is mid range in terms of heat and can be used on BBQs, in stews and sauces and also on nacho crisps and poured over cooked chicken and prawns. If you aren’t familiar with ‘Gambas al Pil Pil’ it’s a famous Andaluz dish made with fresh sizzling prawns cooked in very hot garlic and chilli. Whilst his is more of a pouring sauce, it did take it’s influence from one of our favourite Spanish dishes.
